Nor Mai Gai stuffed Chicken

At my grandfather’s 80th birthday, we had this amazing chicken dish. It was a bit like this: Sticky Rice Chicken (Nor Mai Gai) but not exactly. I remember the chicken being stuff with not just the sticky rice, but also with chicken. Today, Taft and I undertook to recreate this Nor Mai Gai Stuffed Chicken.

We didn’t really take pictures along the way though I grabbed a few of the finished product. Just refer to the xanga, it probably has better looking pictures.

We followed the recipe to the ‘t’ in the beginning. We made the sticky rice as they described. However, we prepared the chicken differently. We still wanted chicken in our skin but also the rice. We deboned our chicken in order to accomplish this. Once the bone was off, we then separated the skin from the meat where it hadn’t been separated already. We then stuffed the rice in between the chicken and the skin. It was a bit bulging so we pinned the chicken together with a chopstick down the opened middle. We put two through the sides for support. Now we couldn’t cook it the same since we have raw chicken in our skin so we baked it at 350F for 20-30 minutes. Once it looked pretty done, we fired up our wok with some oil, coated the chicken with cornstarch and garlic salt on both sides and proceeded to fry it to get a crispy skin. I don’t think we fried it long enough or coated enough but it still came out pretty crispy in some places. Our chicken was big enough to feed three people or two really hungry guys.

Overall, it was still really good. One of my friends was coming home from shopping and he stopped by b/c our door was opened. We offered him a piece and he didn’t stop praising us for madd cooking skillz. Haha, it was awesome. It took about 2.5 hours to make but could probably be done quicker the next time. Sticky Rice probably takes about 30 minutes not counting time to make and cool rice prior. Took us about 40 minutes to debone the chicken since we’ve never done that before. 10 minutes to stuff, 30 minutes to bake, and 10 minutes to deep fry. Plus other time just chillin’ plus figuring out what to do next.

All in all, it was a fun time hangin’ out with Jon and making some awesome Nor Mai Gai Stuffed Chicken. Delish!
